Crush pimento
pickapeppa sauce
Walkerwood jerk seasoning
crush/granulated garlic
black pepper
Lawrys seasoning salt
onion powder
1 tablespoon of oil

After you clean the meat, season it with the above items and allow to soak for at least a day.

I don't fry my oxtail at all. I cook it slowly adding 1/2 cup of water and browning (the amount depends on how dark you like it) and allow it to sweat. You can help the meat sweat by adding foil paper under the pot cover. Keep it on a low fire and add water in 1/2 cup increments till the oxtail is about 90% cooked. How can you tell? A fork can go through the largest piece but the meat is not falling off the bone. The last thing you want to do is spwile di pot

Add a little ketchup, brown sugar, thyme, spinnas and/or butta beans and let it cook till it thickens.


That will be $20 please

clean de oxtails

season wid above and let it marinate (overnight if possible)

brown the meat (only) for bout 10mins or so then throw on the water and de ressa de dry season along with carrots.

bring to boil, then turn down to mid heat and let simmer for bout 2.5 hours...add butter beans and let cook for another 30 mins.
yuh can check for meat tenderness or if the water a dry out add more.

You can cook huh? Thank God I already know they sell Walkerwood seasoning here in the states.

I guess everybody use a diff combination of seasonings I would add that to get it nice and tender and not trashy... I use a pot with a thick bottom - sometimes i use the pressure cooker but I don't pressure it...

After browning it in abt 2 TBSPS of oil - I add my vegetable seasonings (which I took off before browning)and water - bring it to a boil and then lower the heat to medium to low and let simmer for about 1 to 1 1/2 hour... will be nice an tender and not trashy or chewy. ( Add the beans in the least 15 mins of cooking - u can also add carrots diced)

Tulip if you want to cheat - Jamaican Choice has a seasoning called Oxtail seasoning - use that with a pinch of salt and pepper and whatever else u like - it does a really good job

For real? That's some excellent advice. I have not noticed Jamaican Choice in the grocery store, but we do have plenty markets called West Indian.

I'm going to have to get some pickapeppa sauce just on general principle. Do you mainly use it on meats?

Wow I can't believe so many people still brown oxtail.
I season similar to the posted recipies, and then just simmer on a low heat. But no browning.
